Avocado Chocolate Mousse
This version is both egg and dairy free!
Serves 2
Prep time – about 15 minutes
Ingredients:
- 1 ripe Hass avocado
- ¼ cup raw cacao powder, unsweetened
- ¼ cup coconut milk (from the can)
- ½ teaspoon vanilla extract
- 2 tablespoons raw honey
- 1/8 teaspoon sea salt
Method:
Put all ingredients into a food processor bowl. Blend until completely smooth.
Spoon into dessert cups. Serve well-chilled. Topping ideas include fresh berries, or chopped pistachios sprinkled with sea salt or a smidgen of cinnamon! Or, how about a dollop of coconut cream! Yummy!
