Today I’m sharing my favorite fast, fresh and nutrient-dense option for making your next salad and salad dressing!
Kerry’s 5-minute salad
This dressing is enough for 4 large salads or 6 smaller salads.
Dressing
In a small jar add the following ingredients:
1/2 teaspoon sea salt (to taste)
1/4 teaspoon fresh ground black pepper (to taste)
a big pinch of chili pepper flakes (optional)
1-2 cloves garlic, minced
3 tablespoons extra virgin olive oil
2 tablespoons raw, unfiltered apple cider vinegar
Put the lid on the jar, shake vigorously until well blended.
Pour over your favorite baby greens salad mix.
Toss and serve! That’s it! Enjoy!
Here are my tips for making this salad extra yummy…
1. I use Bragg’s organic, raw, unfiltered apple cider vinegar with the ‘mother’.
2. I use “California Frantoio” extra virgin olive oil from The Olive Crush. If you are local to Half Moon Bay, there is an Olive Crush store on main street. https://www.theolivecrush.com
3. I love visiting our local Farmer’s Market on Saturday mornings. One of my favorites for mixed greens is Airielle at Fly Girl Farm

3. If you have any leftover dressing, it will keep in the fridge for a day or two. Remove from the fridge about 15 minutes before you plan to use it as it can get a bit thick when chilled. Add a tiny bit of olive oil and apple cider vinegar, shake vigorously, pour over salad, toss salad to coat ingredients and serve!
