Like chocolate? Like a quick power boost? This is the recipe for you! Take these to work, enjoy as an afternoon snack, send them off to school with the kids, take them on a hike or to the beach …

If you are allergic to nuts, make this recipe with seeds. Replace the cashews and walnuts with sunflower seeds, pumpkin seeds, sesame seeds, or flaxseeds. Consider adding dried cherries or cranberries. These store in the fridge for up to one week.

Chocolate Power Balls:
Makes 16 balls

Ingredients:
1 cup walnuts
1 cup cashews
1 cup pitted and chopped Medjool dates
1 tablespoon chia seeds
1 tablespoon pure vanilla
½ cup vegan chocolate chips
½ teaspoon cinnamon
1/8 to ¼ teaspoon cardamom
1 tablespoon water

Directions:
Place the nuts and dates in a food processor and pulse until ground. Add the rest of the ingredients and whirl until the mixture begins to form a ball.

Remove the mixture from the food processor and put in a large bowl. Spread some waxed or parchment paper on a cookie sheet and with clean hands, form small balls (about tablespoon-size) and place them on the cookie sheet.

Place in the fridge for about an hour to harden.
