One of my favorite foods is soup.

10 Reasons I love soup…

1. Soup is economical.
It is inexpensive to make, packed with nutrition and a quick meal in a bowl for breakfast, lunch or dinner. It’s perfect for busy weeknights or a weekend lunch.

2. Soup is a great way to leverage what you have in the fridge. It’s adaptable and versatile.
Soup recipes are so forgiving, easily adjusting to whatever ingredients are in the fridge or pantry. For example if you don’t have onions or garlic use scallions, leeks and shallots.

3. Soup is time-saving as it’s great to make ahead of time and makes great leftovers.
Make larger batches of soup, then freeze. If a recipe calls for finishing touches, add them after the soup is thawed and reheated.

4. Soup is great for picky eaters.

5. Make soup once and serve it several ways throughout the week. For example one night serve soup, salad and crusty bread. Another night serve soup and sandwich. Another night serve soup on its own.

6. Lower your sugar intake.
Consider your soup like a savory smoothie. Drinking your vegetables through a straw may not be very appealing but a bowlful of vegetables in wonderful healthy broth is so inviting!

7. Soups are easy to digest so you have more energy.
Soups are partially blended and composed of foods that are already slightly broken down so they spend much less time in your digestive tract, therefore keeping us feeling light, yet fueled. Digestion has a huge impact our energy levels. Heavy meals or ones that include certain hard-to-digest ingredients (like animal products, or gluten for some people) require a tremendous amount of the body’s energy to be dedicated to processing these ingredients through the digestive tract. As a result, we may feel full, but don’t feel well.

8. Soup is a comfort food any time of year.

9. A soup with stock, vegetables, and beans is a pretty well-rounded meal, all in one pot.

Curried Red Lentil, Kale and Sweet Potato Soup
Servings: 5-6
Ingredients:
1 tbsp coconut oil
1 medium yellow onion, finely diced
½ jalapeno pepper, seeded, diced
2 tsp grated ginger
2 large garlic clove, minced
2 tsp Garam Masala curry powder
1 tsp sea salt
3 tbsp tomato paste
5 cups water
1/2 of a 14oz can of full fat coconut milk mixed with 1/2 cup of water
1 cup red lentils
1 large jewel sweet potato, peeled and diced into ½-inch cubes
1 bunch dinosaur kale, stemmed and coarsely chopped
Directions:
Heat the coconut oil in a large pot. Add the onion and cook over medium heat. Add a pinch of salt and cook for about 5-8 minutes, or until onion is tender.
Stir in the jalapeno, ginger, garlic, curry powder, and salt. Stir for about a minute, stirring frequently.
Add the tomato paste, water, coconut milk, red lentils, and sweet potato. Bring to a boil, and then lower to a simmer.
Cook, partially covered, until the sweet potatoes are tender and the lentils are cooked through, about 30 – 45 minutes.
Stir in the kale and cook for about 5 minutes, or until wilted and tender. Serve.
Optional toppings for bowls of soup: chopped cilantro, toasted pumpkin seeds, dollop of greek yogurt
