What to do with all those fabulous green beans that are currently in season. Here is what I did with ours that we bought from our local farmer’s market this past weekend….
Garlic Steamed String Beans
Serves 6-8
Ingredients:
1+ lbs of string beans
2+ cloves of garlic, minced
2 tablespoons Tamari Sauce
1 tablespoon Nutritional Yeast (optional)
Juice of 1/2 a lemon
Directions:
Wash beans, chop ends off and cut in half (I left mine whole this time)
Fill a pot with 2 inches of water and bring to a boil
Place beans in a steamer basket and place over the boiling water
Cover beans and steam for 5 minutes (until crisp, tender)
In a large bowl combine remaining ingredients
When beans are done (crisp, tender), add them to the garlic mixture
Mix until string beans are coated and serve.
Note: We served ours with a quinoa, vegetable patty and a large side salad. Not a scrap was left!
