Kerry’s “Kid-Friendly” Guacamole

Serves 4-6

Ingredients:

  • 3 ripe avocados
  • ½ red onion, minced (about ½ cup or so)
  • 1/3 cup cilantro leaves, finely chopped
  • 1 fresh lime squeezed (yields about 1 tablespoon or so)
  • ½ teaspoon sea salt

Method:

Cut avocados in half.  Remove Seed.  Scoop out avocado into a mixing bowl and mash.

Add remaining ingredients and mix until all ingredients fully incorporated and preferred consistency.

For an adult version add to the above ingredients:

  • 1 – 2 Serrano Chiles, stems and seeds removed and minced
  • A pinch of freshly ground black pepper
  • ½ ripe tomato, seeds and pulp removed, chopped (add this to guacamole and mix just before serving)

Note:  Start with this recipe as a guide and adjust to your taste.

Much of this is done to taste due to the variability of freshness in the ingredients.
