Kerry’s Outrageous Muffin Recipe:
Ingredients:
1/3 cup Bob’s Red Mill Cornmeal (Medium grind)
1 1/3 cup Bob’s Red Mill Oat Flour
1 cup Bob’s Red Mill Almond Meal/Flour
1/3 cup Flax Meal
1/3 coconut palm sugar (can use brown sugar)
¾ Tsp. Salt
1 Tsp. Baking Soda
Ingredients:
1/3 cup Bob’s Red Mill Cornmeal (Medium grind)
1 1/3 cup Bob’s Red Mill Oat Flour
1 cup Bob’s Red Mill Almond Meal/Flour
1/3 cup Flax Meal
1/3 coconut palm sugar (can use brown sugar)
¾ Tsp. Salt
1 Tsp. Baking Soda
grated peel of 1 large orange
½ cup raisins or dried cranberries
½ cup diced dried Apricots
2 large eggs, beaten
1 cup plain yogurt (Straus whole-fat yogurt works best)
1 Tsp. vanilla
1/3 cup coconut oil (liquid form)
Method:
Mix dry ingredients and dried fruit together in a large bowl.
Combine liquid ingredients and stir into dry ingredients just until moistened. Batter will be lumpy.
Fill oiled or paper-lined muffin tins 2/3 full.
Bake in pre-heated 350-degree oven for 25-30 minutes.
Makes 12 muffins.
