With the weekend upon us and the Academy Awards on TV Sunday night maybe you are looking for some yummy snacks to share?! Here’s a thought…

I LOVE salsa! I always have some variation of salsa in the fridge. Why? When you make it yourself, salsas are fresh, bursting with flavor, easy to make, easy on the budget, nutrient-dense, colorful, flexible ingredients, and everyone loves them! You can eat salsa with just about anything. Salsas also make great snacks.

Sharing a favorite along with ways to change it up, and tips on what to eat salsa with – other than your favorite chips!

Persimmon Salsa…
Makes a huge bowl full!

Ingredients:
5-8 very ripe persimmons
2 cups Roma tomatoes, chopped (4-5 small)
1 1/2 cups cilantro, chopped
1 cup green onions or chives, chopped
1/2 – 1 cup red onion, chopped

Directions:
Place all ingredients in a food processor or blender and mix until desired consistency.

Want a spicy version? – add 1 jalapeño pepper, seeded and chopped

Can’t find persimmons or don’t like them? – use mangoes or papayas instead

What to serve salsa with besides chips? – Try these ideas…
1. Hummus
2. Pizza (as a topping or condiment)
3. Lettuce leaves like a boat (romaine, butter lettuce, etc)
4. Eggs
5. Potatoes: baked, mashed, roasted, hash
6. Soup (tortilla, corn chowder)
7. Grains (rice, quinoa)
8. Pancakes (instead of syrup or mixed in the batter)
9. Corn bread (mix it in the batter)
10. Serve the salsa with a platter of fresh vegetables
11. Serve on top of a salad
12. Serve on a sandwich
