In our home we try to eat as much seasonally as possible.  Foods are fresher, more local,  less expensive, abundantly available, changes up your eating habits, and is better on the environment.  On that note here is an amazing Winter Salad for you to share….

This salad is beautiful to look at, has amazing nutritional value, and tastes phenomenal!

Quintessential Winter Salad
Serves 4

Ingredients:
3 Tbs. fresh lemon juice
1 tsp. Dijon mustard
1 tsp. chopped fresh mint
3 Tbs. extra virgin olive oil
1 bunch Dinosaur kale, ribs removed and leaves finely shredded
2 Tbs. toasted pine nuts
1 Tbs. finely grated Manchego cheese (leave out if vegan)
2 ruby grapefruits, peeled and segments removed from membrane
1 large avocado, peeled and cut into chunks
2 Tbs. pomegranate seeds

Directions:
Combine lemon juice, mustard, and mint in small jar, and shake well. Add olive oil, and shake well again.

Toss kale with 4 Tbs. dressing in bowl. Add pine nuts and Manchego, and toss to combine. Divide among four plates.

Heap grapefruit segments and avocado chunks on top of kale, drizzle with remaining dressing, and top with pomegranate seeds.

Tip:
Consider joining a Community Supported Agriculture (CSA) program in your area.  Essentially, this is a farm or group of farms where local patrons buy a “share” from the farmer, and receive a portion of whatever the farm produces, depending on the season.  Go to localharvest.org for more information.
