Three dressings to top off a great salad!

1. Basic Italian Dressing
2. Guacamole Dressing
3. Traditional Vinaigrette

Basic Italian Dressing…
This salad dressing is versatile. Vary the flavor using different types of vinegar.

Whisk together:
1/2 cup vinegar (apple cider, rice, or balsamic)
1/4 cup water
2 cloves garlic (freshly minced)
1 cup extra virgin olive oil

Mix in:
1 teaspoon mix parsley, basil, and oregano
Pinch of sea salt

Variations:
Substitute 1/2 cup lemon or lime juice for the vinegar.

Add 1 teaspoon each of Dijon mustard, nutritional yeast, flax seeds, and dulse.

Guacamole Dressing:
Give your salad a creamy yet spicy flare!

Mash:
2 Haas avocados (very ripe)

Add:
2 Roma tomatoes (ripe)
Juice of 1 lemon
2 cloves garlic, minced
1/4 teaspoon chili or cayenne pepper

Thin with 1/4 cup water. Blend to make creamy. Use on the side or mix only the amount of salad you are going to eat at the meal. Salt and pepper to taste.

Variation:
Add 1/4 cup finely chopped cilantro and 1/8 cup minced red onion.

Traditional Vinaigrette Dressing:
Family Favorite direct from Italy.

Whisk together vigorously:
2/3 cup olive oil
1/3 cup balsamic or red wine vinegar
1/8 cup water

Add:
3 cloves garlic, minced
1/2 teaspoon dry mustard
Salt and Pepper to taste
